Chilli spiced olives

  • Makes 1½ cups
Chilli spiced olives

Ingredients

  • 2 cloves garlic, peeled
  • ½ cup olive oil
  • ¼ cup white wine
  • ¼ cup water
  • ¼ cup lemon juice
  • 1 teaspoon whole peppercorns
  • 2-3 dried chillies
  • 1½ cups olives (use a combination of green/black/stuffed)
  • 2 thin slices lemon
  • 1-2 bayleaves
  • sprig marjoram or oregano

Method

  1. In a saucepan bring to the boil the garlic, olive oil, wine, water, lemon juice, peppercorns and chillies. Simmer for 5 minutes. Cool.
  2. In a 2½ cup capacity jar, arrange the lemon slices, olives, bayleaves and marjoram or oregano. Pour over the cooled liquid.
  3. Leave to marinate overnight, at least, before using. Keep refrigerated, turning the mixture occasionally and use it within 2 weeks.
  4. To serve, garnish with fresh herbs.
