Try this chilli con carne wrapped up in a tortilla for a meal on the go or alternatively top on a boiled potato.
Ingredients
- 500 grams lean beef mince
- 2 onions, finely diced
- 1 tablespoon minced garlic
- 1½ teaspoons paprika
- 1 teaspoon ground cumin
- 425 gram can chilli-flavoured kidney beans
- ½ cup tomato sauce
- 1 cup beef stock
Method
- Brown the beef well in a deep lidded frying pan. Seat aside.
- Cook the onion in an extra dash of oil until soft. Add the paprika, garlic and cumin and cook a further minute.
- Return the mince to the pan with the chilli beans, tomato sauce and beef stock.
- Cover and simmer 15 minutes, stirring occasionally until the beef is well flavoured. Serve the chilli con carne atop a baked potato garnished as wished or wrapped in a tortilla with your favourite salad ingredients for a meal on the go.
Cooks Tips
- Substitute chilli-flavoured kidney beans with standard baked beans and chilli powder or flakes to taste. - For a chic but casual lunch, mix together ¼ cup chopped pimento-stuffed olives, ½ chopped green pepper, a handful of chopped parsley with 1 diced avocado and serve on top of the mince.
