Ingredients
- 8 sheets filo pastry
- 50 grams melted butter
- 4 chicken breasts, skin removed
- ¾ cup walnut paste or 175 grams walnut cheese or Quick Walnut Cream
Quick Walnut Cream
- ½ cup cream cheese or light cream cheese
- ½ cup walnut pieces or chopped walnuts
- 1 teaspoon minced garlic
- 1 tablespoon chopped chives
Method
- Brush one sheet of filo with melted butter and top with a second sheet of pastry. Place one chicken breast in the centre at the top of the buttered filo sheets and place one quarter of the walnut paste, cheese or cream on top.
- Fold the sides of the filo into the centre and then roll the chicken down the length of the filo pastry to enclose the chicken. Place on a greased baking tray and brush with melted butter. Repeat to make 3 more parcels with the remaining filo, chicken and walnut paste.
- Bake at 180ºC for 35 minutes. Serve with seasonal vegetables.
Quick walnut cream
- Mix all the ingredients together.
Cooks Tips
Variations - Place a rasher of bacon around the chicken and walnut paste before wrapping in filo. - Use boneless chicken leg and thigh portions if wished.
