Ingredients
- 8 chicken drumsticks
- 3-4 tablespoons seasoned flour
- oil for frying
- 1 leek, trimmed, washed and diced
- 1 carrot, peeled and diced
- 2 stalks celery, sliced
- 1 apple, grated
- 2 cups medium-sweet cider
- 1 tblsp honey
- ΒΌ cup celery leaves or parsley leaves, finely sliced
- pepper to season
Method
- Toss chicken drumsticks in seasoned flour. Pan fry in a dash of oil in a lidded frying pan until golden on all sides.
- Add leek, carrot, celery and apple to the pan. Pour over cider and honey.
- Cover and simmer gently for 30 minutes until golden.
- Sprinkle in celery leaves and season with pepper.
- Serve with seasonal vegetables and couscous to mop up the juices.
Cooks Tips
- If wished, thicken the sauce with 1-2 tsp cornflour mixed to a smooth paste with a little water. - Add a bouquet garni when simmering the chicken for a herby flavour. - Seasoned flour is simply made by shaking a couple of tablespoons of flour with a good seasoning of salt and pepper and maybe a pinch of dried mustard powder if you have it to hand.
