Flavours from the deep south of America. This paste is great served through rice, added to a chicken casserole or mixed with sour cream to make a dip.
Ingredients
- 1 small onion, peeled and chopped
- 2 tablespoons tomato paste or sundried tomato paste
- 2 cloves garlic, peeled
- 2 tablespoons each chopped fresh oregano and thyme leaves
- 2 tsp paprika
- 1 teaspoon each ground cumin and pepper
- ½ teaspoon cayenne pepper
Method
- In a small food processor put the onion, tomato paste, garlic, fresh herbs and spices and process to form a paste. Transfer to a jar, seal and refrigerate. Use within 10 days.
