Bran biscuits

Bran biscuits

These biscuits are unbelievably moreish. This recipe comes from my mentor Tui Flower, who almost always has them on hand. They are best served lightly buttered.

Ingredients

  • 100 grams butter, softened
  • 1/3 cup sugar
  • ¼ cup milk
  • 1 cup flour
  • 1 cup wheat bran
  • 3 teaspoons baking powder

Method

  1. Preheat the oven to 180ºC. Lightly grease 1-2 baking trays or line with baking paper.
  2. Beat butter, sugar and milk together until well mixed.
  3. Stir in the flour, bran and baking powder to make a soft mix.
  4. Turn the dough out onto a heavily floured surface and bring together. You may need to add more flour.
  5. Roll out to 2mm thickness. Cut into shapes and place on the prepared trays.
  6. Bake in the preheated oven for 18-20 minutes or until crispy and brown.
  7. Transfer to a cake rack to cool. Store in an airtight container.

Cooks Tips

Use wheat bran flakes, not oat bran for this recipe. Both though, are an excellent source of fibre. Keep bran well sealed in a cool place or even in the refrigerator.

Wheat bran is found in the baking aisle at the supermarket.

If you do not have 1/3 cup measure, use ¼ cup plus 2 tablespoons sugar.
