Bobby's Peanut Biscuits

A guaranteed favourite for your tins.

Ingredients

  • 125 butter
  • 1 cup caster sugar
  • 1 orange (grated rind)
  • 1 egg
  • 1 cup self-raising flour
  • 1 cup corn flakes
  • 1 cup rolled oats
  • ½ cup chopped peanuts

Method

  1. Beat the butter, sugar and orange rind to a cream. Add the egg and beat well.
  2. Gently fold in the flour, cornflakes, rolled oats and peanuts.
  3. Place tablespoonfuls of the mixture on to a greased baking tray.
  4. Bake at 180°C for 15 minutes or until the biscuits have browned.
  5. Cool on a cake rack. Store in an airtight container.
