A heavenly blue combination that’s best served with the Onion Marmalade.
Ingredients
Pastry
- 1 cup flour
- 2 tsp ground ginger
- pinch salt
- 100 grams butter
- 1 egg yolk
- 1-2 tblsp water
Filling
- 3-4 tblsp walnut paste
- 125 grams blue cheese, sliced
- 2 eggs
- ½ cup cream
- 2 rashers bacon, diced and cooked until crispy
Method
- Put the flour, ginger, salt and butter into a food processor and process until it resembles crumbs. Pulse in the egg and water turn out and bring together. Roll out and line a 10cm x 30cm long metal flan dish. Bake blind.
- Spread the walnut paste on top of the cooked pastry and then top with the blue cheese.
- Beat the eggs and cream together and pour on top. Scatter over the bacon.
- Bake at 190°C for 30 minutes or until set.
- Serve with an Onion Marmalade.
