These muffins are a combination of my favourite savoury ingredients.
Ingredients
- 125 grams Brie cheese
- 3 cups flour
- 2 tablespoons baking powder
- ½ teaspoon salt
- 1 teaspoon dried mustard
- ½ smoked chicken breast, diced
- 1 avocado, stoned, peeled and diced
- 1 cup grated Cheddar cheese
- 2 eggs
- 1¾ cups milk
- 100 grams butter, melted and cooled
Method
- Dice half the Brie and slice the remaining half.
- Sift the flour, baking powder, salt and mustard into a bowl. Stir in the diced Brie, smoked chicken, avocado and grated cheddar cheese and make a well in the centre.
- In a jug, mix together the eggs and milk and mix into the dry ingredients, with the melted butter.
- Divide the mixture evenly among 12 well-greased muffin tins and top each with a slice of Brie.
- Bake at 220ºC for 18-20 minutes until well risen and golden. Cool in the tins for 5 minutes before enjoying.
Cooks Tips
- Add some chopped fresh herbs, about ¼ cup, choosing from herbs like chives, parsley, dill or chervil.
