Ingredients
- 1 red chilli, deseeded and finely chopped
- 2 tsp grated ginger
- 1 tblsp Asian Fish Sauce
- 1-2 spring onions, finely diced
- ΒΌ cup chopped fresh coriander
- 500 grams pork mince
- oil to panfry
- 1-2 tsp sesame oil
- 1 tsp finely chopped red chilli
- 1 tsp grated ginger
- 400 gram can plums, drained and stoned
- 2 tblsp chopped fresh coriander
Method
- In a bowl mix the red chilli, ginger, fish sauce, spring onions, coriander and pork mince.
- With wet hands shape the mixture into sausages. Pan-fry in a little oil, turning until golden.
- In a small saucepan, heat the sesame oil and gently pan fry the red chilli and ginger for a few minutes until tender.
- Roughly mash the plums and stir into the saucepan with the ginger and coriander and warm through.
- Serve the sausages on top of the noodles with the plum sauce.

Very enjoyable, and will have again. However, I did find the mixture didn't bind so added an egg and cooked as a pattie.
