Make use of canned apricots with this recipe.
Ingredients
- 2 x 425 gram cans apricots in light syrup
- ½ cup brandy
- 1 orange (grated rind and juice)
Method
- Drain the apricots well, reserving the syrup. Place the apricots in a serving dish.
- Take half the syrup (discard the rest) and mix with the brandy, orange rind and juice. Bring to the boil (microwave or on the stove) and simmer for 2 minutes. (This is to soften the brandy taste and leave you with the subtle under flavour).
- Cool the syrup for 5 minutes and pour over the apricots. Leave until ready to serve. Delicious with Black & White Amaretti biscuits.
