Smoked chicken dressed up for a rosette-winning lunch.
Ingredients
- 1 smoked chicken
- 6 apricots, stoned and thickly sliced
- 200 grams blanched beans or snowpeas
- 4 spring onions, finely sliced
- salad leaves for 4
Dressing
- ¼ cup apricot jam
- 1 tblsp curry powder or paste
- ½ cup mayonnaise
- ¼ cup sour cream or whipped cream (optional)
Method
- Pull the meat from the smoked chicken and cut into large chunks.
- Place in a bowl with the apricots, snow peas, spring onions and salad leaves and toss to mix.
- Serve in deep plates and bowl garnished with a spoonful of the Creamy Apricot Mayonnaise.
Creamy Apricot Mayonnaise
- Combine all ingredients gently.
