A family favourite!
Ingredients
- 3/4 cup caster sugar
- 250 grams butter, softened
- 1 teaspoon vanilla essence
- 1 egg
- 2 teaspoons baking powder
- 2 1/2 cups flour
- 3-4 eating apples - lemonade, jazz or similar
- 1 tablespoon caster sugar
Method
- Preheat the oven to 180 degrees Celsius and set the oven rack in the centre of the oven. Grease the base and sides of a 23cm round cake tin and line with baking paper.
- Into a food processor put the first measure of caster sugar with the butter, egg, and vanilla essence and process until smooth and light. Add the baking powder and flour and use the pulse button to mix.
- Press 3/4s of the mixture into the base of the prepared cake tin. Peel the apples, core, and quarter and slice thinly. Scatter the slices over the dough base and sprinkle with 1 tablespoon of sugar. Use a flured hand to dot the remaining mixture over the top of the apples as evenly as possible.
- Bake in the preheated oven for 35 minutes or until the tart is well-browned and the tart is firm to the touch. Serve dusted with icing sugar and accompanied with cream - lots of it!
