Keep this on hand for a way to help celebrate Anzac Day with family each year.
Ingredients
- 1½ cups self raising flour
- 100 grams butter
- ½ cup rolled oats
- ½ cup sugar
- ¼ cup coconut
- 1 cup milk
- 1 egg
- 1 teaspoon vanilla essence
Sauce
- 50 grams butter
- ½ cup golden syrup
- 2 cups boiling water
Method
- Sift the flour into a bowl. Rub in the butter until the mixture resembles fine crumbs. Stir in the rolled oats, sugar and coconut and make a well in the centre.
- In a small bowl mix together the milk, egg and vanilla essence. Pour into the well and stir gently together with a holed spoon to form a smooth but stiff batter. Spread into a well-greased 8 cup capacity ovenproof dish.
- Make the sauce by mixing together the butter, golden syrup and boiling water and pour over the batter.
- Bake at 180ºC for 45 minutes. Serve with a dusting of icing sugar and whipped cream to accompany.
