These cakes are a variation on a Cup Cake.
Ingredients
- 125 grams butter
- 1/2 cups sugar
- 1/2 teaspoons vanilla essence
- 2 eggs
- 1/3 - 1/2 cup milk
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/2 cup currants
Method
- Cream butter and sugar until white, light and fluffy. Add vanilla essence.
- Beat in eggs one at a time.
- Add milk slowly, then sifted dry ingredients and currants.
- Half fill paper cases or patty pans. Bake at 210 deg C for 10-15 minutes.
