Ingredients
- 1 large onion, peeled and finely chopped
- 500 grams New Zealand Quality Mark lean minced beef
- 420 gram can your favourite Beef Soup
- ½ cup red wine or beef stock
- 2 tblsp chopped fresh thyme
- 400 gram bag frozen potato medallions
- ½ cup grated Cheddar cheese
Method
- Heat a dash oil in a frying pan and brown the onion and mince well, breaking up the mince with the back of a spoon.
- Add the soup, red wine or beef stock and thyme. Stir, cover and simmer 15 minutes.
- Divide among 4 individual serving dishes. Mash the defrosted potatoes and mix with the cheese and pile on top.
- Bake at 190°C for 20-25 minutes until hot and golden.
