Breathe life into a pizza with this idea. Use hummus in place of the traditional tomato sauce base. It stays moist while cooking and is a great healthy change.
Ingredients
Tandoori Pizza
- 2 lamb steaks, finely sliced
- 1 tblsp Tandoori Mix
- ¼ cup yoghurt
- 2 pre-made large pizza bases
- 1 cup hummus
- 100 grams fresh spinach leaves, blanched
- ½ cup crumbled feta
- ½ cup grated mozarella (optional)
Salsa
- 2 tomatoes, finely chopped
- 2 tblsp finely chopped onion (spring, red or brown)
- 1 tsp minced garlic
- 2 tblsp chopped fresh coriander
- dash oil and vinegar
- salt and pepper to season
Method
- Dice the lamb into 2cm pieces. Stir the tandoori mix and yoghurt together. Add the lamb and leave to marinate for 1 hour or up to 4. Brush off excess marinade.
- Spread the pizza bases with equal quantities of Lisas Hummus.
- Scatter the spinach leaves and marinated lamb pieces on top.
- Crumble over the feta and sprinkle over the mozarella.
- Cook at 200ºC for 12-15 minutes until the lamb is cooked and the pizza well browned. Sprinkle over the salsa and serve hot.
Salsa
- In a bowl, toss together the tomato, onion, garlic and coriander. Add a dash of oil and vinegar to moisten and then season with salt and pepper.
Cooks Tips
Use Sharwoods or Pataks curry paste not powder and use any of Lisa's flavoured hummus.
