Tasty chicken thighs dressed up for a barbeque
Ingredients
- 8 boneless chicken thigh portions
- ground black pepper
- about 1 tblsp fresh rosemary leaves
- 8 sundried tomatoes in oil
- oil from the sundried tomatoes
- juice 1 lemon
Method
- Place the thigh portions smooth side down on the chopping board.
- Season each with pepper and a little rosemary. Place one sundried tomato on top.
- Fold over to enclose and secure each with two skewers.
- Place in a flat container, pour over the oil and lemon juice and season again with pepper. Cover and marinate for 30 minutes or overnight in the fridge.
- Cook on the barbecue, or grill under a high heat for about 15 minutes, turning until evenly cooked.
- Serve with your favourite summer salads.
