This cake is made with mayonnaise, making it a dairy free cake.
Ingredients
- 1 cup wholemeal flour
- 1/2 cup flour
- 1 tsp baking soda
- 1/2 tsp ground mixed spice
- 1/2 cup raisins
- 2 medium apples
- 2 cup sugar
- 2 eggs
- 1 cup mayonnaise
- 1 tsp vanilla essence
Topping
- 1/2 cup pecan nuts
- 2 tblsp brown sugar
- 1 tsp ground cinnamon
Method
- Sift flours, baking soda and mixed spice into a bowl. Return husks to bowl. Add raisins. Cut apples in half remove cores. Chop 1 ½ apples up roughly and add to flour mixture.
- Beat sugar, eggs, mayonnaise and vanilla essence together. Fold into apple mixture. Pour into a greased, base-lined 20cm ring tin.
- Slice remaining half apple and press slices into the cake mixture. Scatter pecan nuts over cake with brown sugar and cinnamon. Bake at 160 degrees C for 50 minutes to 1 hour or until a skewer inserted into centre comes out clean. Cool in tin.
