Roast shoulder of pork is full of flavour and when stuffed with this delicious nutty pecan stuffing, and accompanied with sweet glazed roast apples, it makes a great roast dinner. Don’t forget to get the butcher to score the skin well, that way it will become crunchy crackling once cooked.
Ingredients
- 1.5 kg piece pork shoulder, well scored
- 2 tblsp oil
- 2 tblsp salt
- 4 apples, peeled and quartered
- 2 tblsp golden or maple syrup or honey
Pecan Stuffing
- 1 cup fresh white breadcrumbs
- 1/4 cup chopped pecans
- 2 tblsp melted butter
- 1-2 tsp minced ginger
- salt and pepper to season
Method
- Mix together the stuffing ingredients. Open out the pork shoulder and place the pecan stuffing in the center. Roll up to enclose and secure with string.
- Place the pork in a roasting dish and massage the skin well with the oil and salt.
- Roast at 220°C for 20 minutes and then lower the temperature to 170°C for 1 hour.
- Scatter the apples around the pork and turn over in the juices that have collected in the pan and continue cooking for a further 30 minutes.
- Remove the pork from the pan and set aside to rest. Drizzle the golden, maple syrup or honey over the apples, toss in the pan juices and return to the oven for a further 10 minutes until golden and crispy.
- Serve the pork sliced with the roasted apples, your favourite roasted vegetables and gravy or sauce to accompany.
Cooks Tips
If you do not have pecans, use walnuts or pecans.
