Having leftovers in the fridge means that you can quickly prepare an easy meal, such as this hash made from the remains of (Honey Glazed) Corned Beef.
Ingredients
- 4-6 tblsp olive oil
- 2 large orange fleshed kumara, peeled and diced
- 1 onion, peeled and diced
- 2 tsp minced garlic
- 1 green pepper, diced
- 1 red chilli, deseeded and finely chopped
- ½ cup gherkins, diced
- 350 grams cooked corned beef, sliced
- ½ cup sundried tomatoes, diced
- 2 tblsp chopped fresh parsley
- ¾ cup grated tasty cheese
Method
- Heat the oil in a large pan and add the diced kumara and onion. Cook over a moderate heat stirring occasionally until almost cooked.
- Add the garlic, green pepper, chilli and gherkin and toss quickly in the pan.
- Arrange the corned beef slices over the cooked vegetables. Combine the sundried tomatoes, parsley and cheese and scatter on top. Place under a fan grill, at 220°C for 4-5 minutes until the cheese is golden and the beef hot. Serve immediately with steamed green beans if wished.
