This is the perfect accompaniment to a juicy casserole like Oxtail in Tuscan Flavours.
Ingredients
- 300-400 grams starchy potatoes, peeled
- 4 tblsp crème fraiche
- 2 tblsp freshly chopped chives
Method
- Peel the potatoes and chop into even sized pieces. Cook in boiling salted water until tender. Drain well.
- Mash the potatoes well and then beat in the crème fraiche and chives and whip until creamy. Season with salt and pepper. Serve hot garnished with extra crème fraiche and chives if wished.
