A gumbo is a spicy soupy stew from Louisiana.
Ingredients
- 8 drumsticks
- 2 tblsp oil
- 1/2 red peppers diced
- 2-3 stalks celery, diced
- 1 large onion, peeled and diced
- 2 tsp minced garlic
- 400 can condensed tomato soup
- 1/2 cup chicken stock or water
- 2-3 tblsp chopped fresh thyme and basil or 1 tsp of each dried
- 1/2 tsp each ground chilli, paprika and white pepper
Method
- Brown the chicken legs in a hot, lidded frying pan.? Set aside.
- Add the pepper, celery and onion and garlic and brown quickly.
- Return the chicken to the pan with the tomato soup, stock or water, thyme and basil, chilli, paprika and pepper. Cover and simmer gently for 30 minutes.
- Serve the drumsticks with boiled white rice and your favourite vegetables.
