These simple style casseroles are my favourites. Finish with plenty of fresh thyme or sage and lots of pepper.
Ingredients
- 750grams Quality Mark Lamb Shoulder Chops or diced lamb shoulder
- 2-3 tblsp oil
- 2-3 stalks celery finely diced
- 2 carrots, peeled and diced
- 2 onions, peeled and diced (or use 1 leek)
- 310 gram can cannellini beans
- 1/2 tsp minced garlic
- 3 cups beef stock
- 150 grams smoked sausage diced (optional)
- salt and pepper to season
- chopped sage, thyme or parsley to season
Method
- Brown the lamb or shoulder chops in the hot oil until well browned on all sides.? Transfer to a large casserole.
- Scatter over the celery, carrots, onions or leeks, drained beans, garlic and stock.? (Add the spicy sausage if using).
- Cover and cook at 160°C for 50 minutes until the meat and vegetables are tender.
- Season with salt and pepper and scatter over the herbs before serving.
- Accompany with garlic bread and winter greens if wished.
