Hazelnut oil with its deep warm, toasty flavour gives these biscuits a truly decadent hazelnut taste. Perfect with coffee.
Ingredients
- 1 cup hazelnut oil
- ¾ cup sugar, caster is best here
- 1 egg
- 2 cups flour
- 1 tsp baking powder
- ¼ cup finely chopped toasted hazelnuts
Decoration
- about 15 hazelnuts, halved
Method
- .Preheat the oven to 160°C. Lightly grease 1-2 trays or line with baking paper.
- .Mix together the hazelnut oil, sugar and egg. Sift the flour and baking powder together and stir into the bowl with the finely chopped hazelnuts.
- Roll heaped teaspoonful lots of the mixture into balls and place on a greased baking tray. Place a halved hazelnut into the centre of each biscuit.
- Bake for 15-20 minutes until lightly golden. Cool on a cake rack. Store in an airtight container away from direct light or heat.
Cooks Tips
- For a more economical recipe, use half hazelnut oil with half canola oil.
